Apple Butter

Peel, core, boil apples with a little water. Run through a funnel shaped colander. For each cup of apple pulp add ¾ C sugar and 1 t. cinnamon. Bake in 350 oven in a large roaster type pan 4-5 hours until apple butter is dark. Process in pints, using a hot water bath. Immerse pints 5-10 minutes to avoid mold. Use ½ C sugar or less if apples are sweet.
