| Quinoa and roasted veggies | ||

| yellow squash, chopped | ||
| zucchini, chopped | ||
any additional veggies that you want... you can do more of the above ones, or add bell pepper, green beans, etc. | ||

| tablespoon lemon juice | ||
| tablespoon Italian seasoning | ||
salt and pepper to taste | ||
| tablespoons balsamic vinegar | ||
shredded parmesan | ||
| diced tomatoes | ||
| Cook quinoa according to package directions, for added flavor cook in chicken or veggie broth. | ||
| chop veggies and put in a bowl. | ||
| Toss with oil, lemon juice, italian seasoning, salt and pepper. | ||
| Line cookie sheet with foil and add veggies. | ||
| Roast veggies at 450 degrees for approximately 8-10 minutes. | ||
| Toss roasted veggies with cooked quinoa and balsamic vinegar (more or less vinegar according to personal preference, I don't usually measure so I'm guessing on amount.) Top with parmesan and fresh diced tomato. |
