Quinoa and roasted veggies
1Cquinoa
1yellow squash, chopped
1zucchini, chopped

any additional veggies that you want... you can do more of the above ones, or add bell pepper, green beans, etc.
2Tcup olive oil, divided
1/2tablespoon lemon juice
1tablespoon Italian seasoning

salt and pepper to taste
1tablespoons balsamic vinegar

shredded parmesan
diced tomatoes
Cook quinoa according to package directions, for added flavor cook in chicken or veggie broth.
chop veggies and put in a bowl.
Toss with oil, lemon juice, italian seasoning, salt and pepper.
Line cookie sheet with foil and add veggies.
Roast veggies at 450 degrees for approximately 8-10 minutes.
Toss roasted veggies with cooked quinoa and balsamic vinegar (more or less vinegar according to personal preference, I don't usually measure so I'm guessing on amount.) Top with parmesan and fresh diced tomato.
