Preheat oven to 325. Reserve 2 Tbsp of onions and tomatoes and set aside. Cook bacon in a large skillet until crisp. Remove bacon to a paper towel covered plate. Reserve bacon grease in skillet. Add mushrooms and cook until tender and remove from heat. Chop bacon and add to mushrooms along with tomatoes and onion and mix well. | ||
| Beat eggs and sour cream with a wire wisk until well blended. Pour into a greased 13X9 inch baking dish. Top with bacon mixture and cheese. | ||
| Bake for 30 minutes or until center is set. Sprinkle with reserved onions and tomatoes. Let stand 5 minutes before cutting. | ||
