Cream of Mushroom Soup

2TOlive Oil
1Onion, minced
3Cloves Garlic, minced
2lb Crimini Mushrooms, minced
2Cans Coconut Milk
1/2Cbroth (chicken or vegetable - make your own to ensure that it's paleo)

In a pot, saute onion in the oil until soft. Add garlic and mushrooms and saute for 2-3 minutes. Add broth and coconut milk. Bring to a boil for one minute, then simmer for 20 minutes.
