Crockpot Beef Taco Meat

2lbsbeef, chunked
3Roma tomatoes
2jalapeņo peppers, seeded (include seeds for more heat)
1/2cupunpacked cilantro
1/2lime, juiced
1large clove garlic
1/2teaspoon ground cumin
2large tomatoes
salt to taste

Put salsa ingredients into a food processor/blender/magic bullet until mixture is evenly chopped and mixed well.
Put half of salsa in crock pot with the beef and cook on low approximately 8 hours, until beef shreds easily. Serve on a salad or a lettuce wrap with remaining salsa, diced tomatoes, and any other paleo toppings that you like.
